Karal porichathu

Ingredients

Mutton Liver - 1 kg,Oil - 1/2 cup,curry leaves - 2 stalks,garam masala - for flavouring


Grinding mix
Geera - 1 tbsp,garlic - 15 cloves ,ginger - 2 tbsp,coriander powder - 1 tbsp,Turmeric powder - 1 tsp, Chilli powder - 1 1/2 tbsp , Cinnamon stick - 3" piece, clove - 6 ,salt to taste.

How to cook

Smear wet ground ingredients on liver with salt and leave for 15 minutes.
Cook over medium flame in one cup of water,till the water has evaporated.Heat oil in a pan,fry curry leaves and add cooked liver.Add garam masala and cook for few minutes until oil is drained and liver is dry.

Erachi Varattiyathu

Ingredients
Beef - 1 kg,Onion- 1/2 kg,green chillie - 5 nos,ginger garlic paste - 1 tbsp,Tomato - 1/4 kg,kashmiri chillie powder - 1 1/2 tbsp,coriander powder - 2 tbsp,Turmeric powder - 1 tsp,garam masala powder - 1/2 tsp, Black pepper powder - 1/2 tsp, Geera powder - 1/2 tsp,Cashewnut soaked and ground -- 30 gms, curry leaves - 2 sprigs,Coriander leaves - 1/2 a bunch,Lemon - 1, coconut flakes - 1/2 a cup,coconut oil - 1/2 a cup,salt to taste.
How to cook
Clean and cut beef into small pieces.Mix together salt,1/2 tsp turmeric powder, 1/2 tsp ginger and garlic paste, one onion and Beef.Pressure cook the beef in one cup of water for 15 to 20 m inutes.Fry coconut flakes in oil and remove.Saute onion,green chillies and curry leaves until the onion turns lightly Brown.To this add ginger garlic paste and cashewnut paste and saute well.Simmer.Add chillie powder, coriander powder and turmeric powder and saute well.Add tomatoes and saute on high flame for a few minutes.Add beef with a little gravy and mix well.Then add garam masala,pepper powder,aniseed and lemon juice.Fry for 3-5 minutes.Add fried coconut flakes and coriander leaves.Mix well and transfer into a serving dish.

Malabar Mutton curry

Ingredients
1.Mutton - 500 gms,2.Onion - 2 nos, 3.Chillie powder - 1/2 tsp,4.Turmeric powder - 1/2 tsp,5.Coriander Powder - 2 Tbsp,6.Ginger - 1 " piece, 7.garlic - 8 flakes,8.Green chillie - 4 , 9.salt - to taste,10.Geera powder - 1/2tsp,clove - 3,cinnamon- 2 stick,cardomom-3,curry leaves- 2 sprigs,tomato - 2 nos,potato - 2,oil-3tbsp,coriander leaves - 1/4 bunch.
How to cook
cut mutton into medium sized pieces ,rub ingredients 2- 10 on the mutton and leave for 15 minutes.Heat oil in a pan and add cloves.When they splutter add marinated mutton pieces and fry.Add tomatoes and potatoes and a little water.Cover the vessel with a lid and cook on a low fire.Garnish with coriander leaves.

Mixed Fried Rice
Ingredients
Basmati rice - 1 1/2 cup, Beans ,carrot,cabbage and capsicum - altogether 250 gms,chicken and prawns - altogether 250 gms marinate with 1 tbsp soya sauce.,oil-5 tbspns,spring onions - 5 nos, celery - 1 tbsp,garlic- 1 tbsp,ginger - 1 tbsp,pepper powder - 1/2 tbsp,egg - 1 to 2 nos,salt to taste,green chilli sauce - 1 tbsp.
How to cook
Make steamed rice and spread on a tray.Make scrambled eggs .Steam and cook the chopped vegetables.Heat some oil and add chopped spring onion,celery,garlic& ginger and saute.Put marinated chicken,prawns and stir and fry for 5 minutes.Add cooked vegetables.Now add rice,pepper,salt and green chillie sauce and stir and fry.Garnish with coriander leaves and scrambled eggs.

Egg rice

Ingredients
Basmati rice - 3 cups ,Egg - 5 nos, Tomato Puree - 1 cup, Curd - 1/2-3/4 cup,Green peas-1 cup,Chilly paste - 1tsp,turmeric powder -1/2 tsp,chopped coriander leaves- 1 bunch,oil as required,nuts - to decorate,pepper powder - 1 tsp,salt to taste ,ginger and garlic paste -1 tsp.

How to cook
Heat oil and add boiled green peas & chilly paste and saute for 2 minutes.Add tomato puree and turmeric powder ,ginger and garlic paste and stir well.Add curd, continue heating until the gravy thickens.Add beaten egg and salt&pepper powder.Mix it well.Sprinkle chopped coriander leaves.Make steamed rice and spread on a tray.Mix the egg masala with the rice.Bake for 2 minutes and serve hot.

DUM Mutton Biriyani - Muslim style

Ingredients

For Mutton masala
Mutton - 1kg,Onion- 300 gms ,garlic and ginger paste- 100 gm, Green chillies- 10,Khuskhus- 2 Tsp,curry leaves-coriander leaves-Mint leaves,curd - 1/2 cup,Oil- 3 tbsp,garam masala- 1 tsp,turmeric powder- 1/2 tsp,coriander powder - 1 tbsp, tomato- 2, salt to taste.

For Rice

Jeera rice - 1kg,Onion- 2,cardamom-5,cloves- 8,Fresh lime juice - 1tsp,cinnamon- 2"piece,ghee- 1/2 cup,Hop water - 1 1/2 L

For garnishing

Cashew nuts- 50 gms,Raisins - 50 gm,Onion finely sliced

How to cook


Preparing the masala


Chop mutton into biriyani piece ,wash and drain and keep aside.Grind green chillies,ginger and garlic. Saute onion in oil,till it turns transparent.Add ginger,garlic & green chillies and add ground khus khus,turmeric powder,coriander powder and saute well.Add mutton and fry for a few minutes.Add tomatoes,curd,curry leaves,salt and 1/2 a cup of water.Cook on a low flame and cover with a lid.When the mutton becomes half cooked, add coriander leaves and mint leaves.Cook until the mutton becomes tender and the water evaporates.Remove from fire and keep aside.Now the masala is ready.
Now fry finely sliced onion,cashew and raisins, in ghee and keep aside to cool.

Wash the rice and drain.Splutter clove,cinnamon and cardomom in ghee.Add sliced onion and saute well.Add rice and fry for 4-5 minutes.To this add hot water,lime juice and salt.cover and cook until rice becomes soft and water is absorbed.Stir occasionally.Remove from fire and keep aside when cooked.
Now put one layer of mutton masala in a deep vessel and sprinkle some garam masala on it.Follow this up with a layer of cooked rice,some garam masala,fried onion,cashew nut and raisins.Finish with two more layers,cover with a lid and cook with hot coals on the top part of vessel for 15 minutes.OR it can be baked in a hot oven for 15 minutes.

Now the DUM biriyani is ready to serve with garnished cashew nuts,raisins and Onions.

Vegetable Biriyani

Ingredients
Beans - 1/2 cup, cabbage - 1/2 cup,cauliflower- 1 cup,carrot - 1/2 cup,green peas - 1/2 cup,potatoes - 1/2 cup,Omion - 1 cup, Tomato - 1 cup,green chillie - 6 - 8 nos, garlic-2 table spoon,ginger -2 inch piece,Turmuric powder - 1 tsp,kismis - 1/2 tbsp,coconut- 2 tbsp,cinnamon - 2 piece,cloves- 6 nos,cardomom-6 nos,Pepper- 10 ,coriander leaves - small bunch,coconut milk - 2 cup,Rice 2 cup,water - 2 cup, salt to taste,ghee- 5 tbsp.Kismis and nuts for decoration.
How to cook
Heat ghee and saute spices,crushed green chillie,ginger and garlic .Add turmeric powder and add ground kismis and coconut.Remove from fire.
Saut the onions and tomato till the water dries up.Put back the sauted masala and vegetables and stir for few minutes.Now add 2 cups of coconut milk and 2 cups of water and enough salt.When it start bubbling add the soaked rice and when air holes appear, close the lid tightly, lower the flame and cook for 10 minutes.Turn off fire, keep for another 5 minutes.Garnish with fried onions,kismis,nuts and serve .

Tomato Rice

Ingredients
Basmati rice - 1/2 kg,Tomato - 1/2 kg(remove skin and seed),Thick coconut milk-3/4 cup,ginger - 2 inch piece,garlic - 3 pots,green chillies - 4 nos, Coriander seeds - 1 1/2 Table spoon,Geera - a little , Red chillie - 6 , Onion - 2 nos , turmuric powder - 2 pinch.
How to cook
Grind geera ,ginger, 2pots garlic,coriander seeds & red chillie to a fine paste.Heat a little ghee and saut the remaining sliced garlic,onion & green chillies.Add the grounded masala ,turmeric and saut again.Add chopped tomatoes and cook till thick.
Now mix coconut milk with enough water so as to have double the quantity of rice.Add salt and coriander leaves to it and boil.After it boils add the cleaned rice and when air bubble appears,cover it tightly.Reduce the flame and cook for 10 minutes.Turn off the flame and keep for 5 minutes.Then open and serve with garnished fried onions.
